I love chicken salad- not only is it delicious, but it is great for go-to lunches. However, many recipes have ingredients that are full of hidden sugars, additives and other BS (particularly with the mayo that is used), so it can be hard to get a healthy version. This version, however, is packed with healthy fats and protein and no added sugar! I have a hard time getting my veggies in, so I added in a wider variety than the traditional Chicken Salad will yield, so feel free to add/remove based on your own preferences!
Ingredients:
- 2 large boneless, skinless organic free-range chicken breasts
- 1 cup red grapes, diced
- 1/2 cucumber, diced
- 1/4 red onion, diced
- 1 bell pepper, diced
- 5-7 stalks of celery, diced
- 1 apple (green apples work well in this recipe), diced
- 1 heaping cup paleo mayo (I use Primal Kitchen, but if you prefer to make your own, here is a recipe)
- 1 tsp pink Himalayan salt
- t tsp pepper
Instructions:
- Bring a pot of water to boil, enough for the two breasts to be completely submerged at least a couple of inches
- Once water is boiling, boil chicken for 20-25 minutes until cooked through
- While the chicken is cooking, prep the vegetables and fruit and place into a large bowl
- Once the chicken has finished cooking, shred with two forks
- Add the chicken, along with the fruits and veggies, to the bowl and salt and pepper
- Add the paleo mayo- depending on the brand, you may need a little less or a little more
- Once everything is thoroughly mixed, refrigerate for at least an hour before serving
You can eat this as is, or place on lettuce or gluten-free bread for sandwiches!
