Okay, people- are you ready for a hearty, cozy, winter meal that also happens to be gluten, dairy and sugar-free? This White Chicken Chili recipe is all of those things and more! It’s packed with nutritional goodness, gut-healing ingredients AND you basically just throw it in a crockpot, so it’s quick and easy. I adapted this recipe from another post here, if you would like to see the original!
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 white or red onion, diced
- 5-7 (depending on your vampiric aversion) cloves of garlic, minced
- 1 bell pepper, diced
- 5-7 stalks of celery, diced
- 3 tsp cumin
- 1 tsp oregano
- 1 tsp turmeric
- 1 tsp chili powder
- 14 oz. can full-fat coconut milk
- Himalayan pink salt, to taste
- Pepper, to taste
- 3-4 cups Chicken Bone Broth (I used Kettle & Fire, but Epic makes some amazing options as well if you don’t want to make your own)
- Juice of 1 small lime
- 1/2 c cilantro, chopped
- 1 avocado, diced (when serving)
Instructions:
- After prepping all your veggies, lay them at the bottom of the crockpot
- Add in spices, save the cilantro
- Place chicken on top of veggies
- Add in the bone broth and cook on low for 7 hours, or until chicken is done
- Once the chicken is cooked, shred the chicken with some forks
- Add in the coconut milk, stir and cook on high for another 15 minutes
- Add in lime juice and cilantro, stir
- Garnish with lime wedges, cilantro and diced avocado
