I love chicken salad- not only is it delicious, but it is great for go-to lunches. However, many recipes have ingredients that are full of hidden sugars, additives and other BS (particularly with the mayo that is used), so it can be hard to get a healthy version. This version, however, is packed with healthy fats and protein and no added sugar! I have a hard time getting my veggies in, so I added in a wider variety than the traditional Chicken Salad will yield, so feel free to add/remove based on your own preferences!


  • 2 large boneless, skinless organic free-range chicken breasts
  • 1 cup red grapes, diced
  • 1/2 cucumber, diced
  • 1/4 red onion, diced
  • 1 bell pepper, diced
  • 5-7 stalks of celery, diced
  • 1 apple (green apples work well in this recipe), diced
  • 1 heaping cup paleo mayo (I use Primal Kitchen, but if you prefer to make your own, here is a recipe)
  • 1 tsp pink Himalayan salt
  • t tsp pepper


  1. Bring a pot of water to boil, enough for the two breasts to be completely submerged at least a couple of inches
  2. Once water is boiling, boil chicken for 20-25 minutes until cooked through
  3. While the chicken is cooking, prep the vegetables and fruit and place into a large bowl
  4. Once the chicken has finished cooking, shred with two forks
  5. Add the chicken, along with the fruits and veggies, to the bowl and salt and pepper
  6. Add the paleo mayo- depending on the brand, you may need a little less or a little more
  7. Once everything is thoroughly mixed, refrigerate for at least an hour before serving

You can eat this as is, or place on lettuce or gluten-free bread for sandwiches!
